Leaf lettuce has loose rosettes and may be picked as needed—it's the lettuce of choice where summers are hot. Our head lettuce includes Ithaca, an iceberg type which forms firm heads, and Buttercrunch, a butterhead with large, ruffled outer leaves and blanched hearts.
